While the hiking we do on our roadtrips is fun and interesting, my favorite part of being on the road is food. Either trying new things that we never eat at home or trying to modify the things we eat at home to fit trailer life.
This morning we tried something new. You know those tubes of pork sausage? I had thawed one yesterday thinking I was going to use it for dinner last night, but at the last minute decided not to.
So, this morning as I was pulling baked potatoes out of the fridge to cut up and fry up for breakfast I thought, you know what? I bet I could make breakfast suasage for the kids and they’d love that. And being a bit lazy, instead of hand making little patties, I decided to just slice chunks off and fry those. I am not sure if I am genius or if others have thought of this before, but I was quite pleased with the result.
