When we’re on the road we do a lot of day hikes and we get back to the trailer too late to make supper. Everyone’s hungry though and with 6 of us it’s not realistic to eat out as often as we want to. So while it’s a big appliance, we bring along our slow cooker from home.
This dish and is hearty and hits the spot after a long day on the trails.
It’s easy as far as slow cooker recipes go, just potatoes, ground beef, onions, cauliflower, peas and whatever spices you have on hand.
Oh and you want to see my spice rack? I finally organized it before this trip. I have just basics, minimalist cooking is my motto while on the road.
We have oregano, parsley, garlic salt, curry, cinnamon, salt, black pepper, red pepper, beef bullion, and an “Italian” mix of herbs, and cumin. Those are my “can’t live without them” spices. Perfect for jazzing a mishmash of potatoes, veggies, and meat.
